Ingredients:

25 cups tomatoes (peeled and chopped)
3 green peppers chopped
9 onions chopped
1-1/2 c sugar (optional)
1 cup olive oil
2 tbsp oregano
1 1/2 tbsp basil
3 cloves garlic
4 (13oz) tomato paste
1/4 cup salt

Directions:

Saute onions and peppers in a pan until cooked. Mix all ingredients together and cook in a roaster in a 275 F oven for 2 1/2 – 3 hours. Freeze or pack hot into sterilized jars. Makes 8-9 quarts.
