Ingredients

    • 12 cups grated zucchini
    • 4 cups chopped onion
    • 2 red peppers chopped
    • 2 green peppers chopped
    • 2 yellow peppers chopped
    • 8 cups tomatoes skinned and chopped
    • 2 small cans tomato paste
    • 2 tsp dry mustard
    • 2 tsp garlic powder
    • 2 tsp cumin (optional)
    • 2 cups vinegar
    • 1 cup brown sugar
    • 1 tsp chilli powder
    • 2 tbsp corn starch

Directions

  1. Put zucchini and onions in a large bowl. Sprinkle with 1/2 cup coarse salt. Allow to sit overnight.
  2. Drain and rinse off as much salt as you can.
  3. Combine veggies with remaining ingredients except for the cornstarch. Bring to boil.
  4. Simmer and cook for 1 hour.
  5. Stir in cornstarch if desired.
  6. Bottle and seal.

Makes 12 pints. This is very mild. You can add some jalapeƱos in to give a kick
